Ingredients

chicken broth 1/2 cup
creamy peanut butter 3 tbsp
sriracha chili sauce 1-2 tsp
honey 1 1/2 tbsp
soy sauce 3 tbsp
fresh minced ginger 1 1/2 tbsp
garlic (pressed or minced) 2-3 clove
udon or linguine noodles 8 oz
chopped green onions 8 oz
chopped cilantro 8 oz
limes (cut into quarters) 2 whole
chopped peanuts 2 whole

Instructions

  1. cook noodles in salted water.
  2. in the meantime, combine chicken broth, peanut butter, chili sauce, honey, soy sauce, ginger, and garlic in a small saucepan over medium-low heat.
  3. whisk until smooth and remove from heat.
  4. toss cooked noodles with sauce and divide among 4 bowls.
  5. sprinkle with green onions, cilantro, chopped peanuts, and garnish each serving with 2 lime quarters.
  6. before eating, squeeze lime juice over noodles and stir to combine.
